It is characterized by a diet based
on simple products. These products are gained from hard work of the
agriculture and the breeding, the hunting and the harvest of the spontaneous
fruits of the wood. It is made great use of the cereals, which are
the base of the flour, with which it is made the polenta and the “raviolas”;
the game, the agricultural products, the chestnuts, the cheeses and
dairy products derived from the processing of milk of the herds. In
Maira Valley we also find a strange gastronomic practice; the great
tradition of the anchovies, which are an ichthyic product imported
in the culture of the valley for economic reasons and which today
relives a moment of great rediscovery and valorisation.
